INYA CHOCOLATE BY COCOA BARRY
We are using two very distinct varieties of chocolate on the afternoon tea this year from the Famous Cocoa Barry producer established in 1842
Inya 65% pure noir black chocolate, this has a high acidity to bitterness quality and a heavy cocoa taste. This is used in the making of the hazelnut & chocolate tartlet and also, the chocolate ganache filling in the pistachio sponge finger.
Lactee superior milk chocolate, a full milk pale chocolate with biscuit notes, this is used in the production of the chocolate orange “Jaffa”.
